Chunky avocado salad

Would you believe me if tell you that Spain, is number one avocado producer in Europe?  There is even a “Sun and avocado” Route  which takes you around six towns and villages in the region of  Axarquia.  More than 6.500 hectares in the province of Malaga  produce around 42.000 tones of fruit a year and is a major income for many farmers in Southern Andalusia. Because of its amazing nutritional value, avocado has been gaining popularity lately and  the demand is growing constantly, especially from the countries in European Community.  Avocados offer nearly 20 vitamins  and minerals in every serving, is a good source of B vitamins and are low in sugar. They also contain fiber, which helps you feel full longer. So given all these benefits why not eat more avocados? Because I really love this fruit, I use it quite often in the kitchen, and chunky avocado salad is my favorite. Interested in more info about this amazing fruit? Here

 Ingredients:

2 medium avocados (they have to be soft when touched)

1 medium ripened tomato

small red onion (white will do just fine)

medium green pepper (can be substituted with jalapeno if you prefer spicy)

1/2 cup fresh cilantro, chopped

( I’am in love with this peppery herb so for me is never enough, but if you are not a fan, fresh parsley will do the job)

1/2 lime / lemon juiced

 salt, garlic salt and black pepper (after everyone’s taste)

Preparation:

dice the tomato  (personally I prefer to cut out the seeds and the watery part)

dice the onion & pepper

 Peel the avocado and cut it in small cubes. Squeeze the lime/lemon  first onto the avocado to prevent discoloration.

Combine all the ingredients including the spices and chopped cilantro

The stirring will help break down  the avocado

Note

 Store avocados at room temperature, keeping in mind that they can take 4 to 5 days to ripen. To speed up the ripening process, put them in a paper bag along with an apple or banana. When the outside skins are black or dark purple and yield to gentle pressure, they’re ready to eat or refrigerate.
